Our Story

Started small. Stayed small. On purpose.

The Sparrow began with a question: what if a coffee shop could feel like home, but better? Better light, better music, better coffee.

We come from food and design — restaurants, architecture, hospitality. When we opened in 2021, we wanted to build a place that we'd want to spend our own mornings in: thoughtful, calm, fast when it needs to be, slow when it can be.

Coffee was always the heart of it. Then the nuts — slow-roasted in small batches with sea salt and rosemary. Then the pastries, the signature drinks, the cold brew steeped for 18 hours. Now we have a neighborhood we love and a menu we're proud of.

Philosophy

Four things we won't compromise on.

Coffee with intent

Seasonal, single-origin beans. Dialed in daily, brewed with care, served without ceremony.

Honest ingredients

Local farms, real fats, no shortcuts. If we wouldn't eat it ourselves, we don't serve it.

Warm hospitality

Real conversation, fast service when you need it, a quiet seat when you don't.

Quietly beautiful

A space that calms you down — natural materials, soft light, room to breathe.

Coffee philosophy

Seasonal, single-origin, dialed in daily.

We work with small Greek and European roasters and rotate our beans with the season. Espresso is dialed in every morning, milk is steamed with intention, and pour-over is brewed to the recipe — not the rush.

Nuts & snacks concept

Roasted by us, finished simply.

Aegina pistachios, almonds, walnuts and cashews — roasted in small batches with sea salt, rosemary and a little olive oil. Our trail mix is built on what's seasonal. The avocado toast is, of course, on sourdough.

Milestones

A short timeline.

  1. 2021

    The first cup

    We opened our doors with a small espresso bar and a dream of a calm, well-designed neighborhood corner.

  2. 2022

    Roasting our own

    We started roasting almonds and pistachios in-house, in small batches with herbs from local farms.

  3. 2023

    Signature drinks

    We launched our signature menu — the Sparrow Latte, Pistachio Cold Brew and Honey Almond Cappuccino.

  4. 2024

    A growing community

    Hundreds of regulars, real friendships and a fully revisited menu. The corner is properly ours.

  5. 2025

    A second home

    We opened our second shop in Glyfada — same beans, same nuts, same warmth, by the sea.
